Quick and tasty gnocchi with creamy blue cheese sauce - perfect for busy nights!
Ingredients:
  • 600g fresh potato gnocchi
  • 30g butter
  • 400g mixed mushrooms (such as Swiss brown, chestnut, pine, oyster and portobello), thickly sliced
  • 2 garlic cloves, crushed
  • 300ml thickened cream
  • 1/4 tsp nutmeg
  • 100g baby spinach leaves
  • 100g gorgonzola dolce or other mild creamy blue cheese, chopped
  • 40g parmesan
Instructions:
  • Boil the gnocchi in a pot of salted water as per the packet directions until they float to the top. Use a slotted spoon to take them out and keep aside.
  • In a frypan over low heat, gently melt the butter. Cook the mushroom and garlic, stirring occasionally, for 5-7 minutes until the mushroom softens. Increase the heat to medium, then add the cream, nutmeg, and spinach; cook for 1 minute or until the spinach wilts. Finally, fold in the gnocchi, gorgonzola, and half of the parmesan until everything melts together perfectly.
  • Divide the dish into 4 bowls, sprinkle with seasonings, and serve with the extra parmesan on top.
