Mushroom Spinach Gnocchi with Creamy Boursin Sauce

Quick and delicious mushroom spinach gnocchi with creamy Boursin sauce - perfect meatless weekday dinner!
Ingredients:
  • 1 (18 ounce) package gnocchi
  • 1 tablespoon unsalted butter
  • 0.5 cup sliced fresh mushrooms
  • 4 cloves garlic, minced
  • 0.25 cup heavy whipping cream
  • 0.75 cup reserved pasta water
  • 4 cups baby spinach
  • 1 (5.2 ounce) package garlic and herb cheese spread (such as Boursin®)
Instructions:
  • 1. Boil a pot of salted water and cook gnocchi until they rise to the surface, which takes 2 to 4 minutes.
  • In a heavy skillet over medium-high heat, melt butter until sizzling. Sauté sliced mushrooms until softened, around 3 minutes. Add garlic and cook until fragrant for about 30 seconds. Lower the heat and carefully pour in the cream.
  • Reserve 3/4 cup of cooking water. Layer spinach at the bottom of a colander and drain gnocchi over to gently wilt the spinach.
  • Incorporate cheese into the skillet along with the reserved cooking water, stirring continuously until the cheese is fully melted.
  • Combine the gnocchi and wilted spinach in the skillet, stirring until fully mixed. Serve promptly.
