Creamy Green Bean and Potato Soup

Wholesome green bean and potato soup made with creamy chicken soup, fresh green beans, potatoes, onion, and crispy bacon bits.
Ingredients:
  • 3 cups fresh green beans, trimmed and cut into 1-inch pieces
  • 1 tablespoon baking soda
  • 1.5 cups peeled and diced potatoes
  • 2 cups water, or as needed
  • 0.33333334326744 cup melted butter
  • 0.5 cup diced onion
  • 0.33333334326744 cup bacon bits
  • 1 (10.5 ounce) can cream of chicken soup
  • 3 cups milk
  • salt and ground black pepper to taste
Instructions:
  • In a pot, cover green beans with water and stir in baking soda. Bring to a boil, then simmer over medium heat until beans are almost tender, about 7 to 10 minutes. Drain and set aside.
  • In a large pot, simmer potatoes in enough water to cover until almost tender, about 20 minutes. Do not drain water.
  • In a large skillet over medium heat, melt butter and cook onion and bacon bits until onion is soft and translucent, about 5 to 7 minutes. Transfer to a large pot with potatoes. Stir in cream of chicken soup and milk until smooth. Add green beans and season with salt and pepper.
  • Simmer the soup in a large pot over low heat for about 30 minutes until hot and the flavors have melded.
