Create a savory green bean and potato dish with a flavorful broth, thickened to perfection for a creamy sauce.
Ingredients:
  • 3 cups thinly sliced potatoes
  • 2 cups frozen green beans
  • 0.5 teaspoon dried thyme
  • 0.25 teaspoon ground black pepper
  • 1 teaspoon vegetarian Worcestershire sauce
  • 1 cup vegetable broth, divided
  • 1 teaspoon cornstarch
  • 0.25 cup chopped fresh parsley
Instructions:
  • Heat a large skillet over medium-high heat and toss in potatoes, green beans, thyme, pepper, Worcestershire sauce, and 3/4 cup broth. Let it come to a boil, then lower the heat to medium-low, cover, and simmer until veggies are tender, about 15 to 20 minutes.
  • Blend 1/4 cup of the remaining broth with cornstarch in a small bowl. Mix in parsley. Add this mixture to the skillet and cook, stirring constantly, until thickened and bubbly.
