Creamy Ham Casserole

Delicious ham and vegetable casserole with noodles - a wholesome and easy meal using leftovers.
Ingredients:
  • 4 cups uncooked egg noodles (8 oz)
  • 1 can (10 3/4 oz) condensed cream of mushroom soup
  • 1 container (8 oz) chives-and-onion cream cheese spread
  • 2/3 cup milk
  • 2 cups chopped cooked ham
  • 1 1/2 cups fresh broccoli florets
  • 1 box (9 oz) frozen asparagus cuts, thawed
  • 6 ready-to-eat baby-cut carrots, chopped
  • 2 cups shredded mozzarella cheese (8 oz)
  • 1 cup shredded Cheddar cheese (4 oz)
  • 1/2 cup crushed seasoned croutons
Instructions:
  • Preheat the oven to 400°F. Grease two (8-inch square) glass baking dishes with cooking spray. Prepare and drain noodles according to package instructions, ensuring they are cooked al dente.
  • Combine soup, cream cheese, and milk in a large bowl. Add cooked noodles, ham, broccoli, asparagus, and carrots; stir well. Transfer half of the mixture into baking dishes. In a medium bowl, mix mozzarella and Cheddar cheeses together. Sprinkle half of the cheese blend over the casseroles. Layer the remaining ham mixture over the top. Toss croutons in the remaining cheese mixture and then sprinkle over the casseroles.
  • Bake for 30 minutes, or until golden brown, uncovered.
