Creamy keto taco soup with ground beef, tomatoes, onions, and bold spices for a delicious low-carb meal.
Ingredients:
  • 1 pound ground beef
  • 0.5 cup chopped onion
  • 1 tablespoon ground cumin
  • 1 teaspoon chili powder
  • 1 (8 ounce) package cream cheese, softened
  • 2 (14.5 ounce) cans beef broth
  • 2 (10 ounce) cans diced tomatoes and green chiles (such as RO*TEL®)
  • 0.5 cup heavy cream
  • 2 teaspoons salt, or to taste
Instructions:
  • Prepare all the necessary ingredients.
  • In a large soup pot over medium-high heat, sauté the ground beef with onion and garlic until the beef is browned and crumbly, about 5 to 7 minutes.
  • Remove excess grease and add the aromatic cumin and chili powder. Cook for an additional 2 minutes.
  • Add the cream cheese to the pot gradually, using a large spoon to blend it into the beef until it is fully incorporated and no white streaks are visible, which should take about 3 to 5 minutes.
  • Add the broth, diced tomatoes, green chiles, heavy cream, and salt to the pot. Simmer for an additional 10 minutes until everything is heated through.
