Creamy Lemon-Basil Shrimp Pasta

Quick creamy lemon-basil shrimp pasta ready in 30 minutes for a delicious weeknight meal.
Ingredients:
  • 0.75 (16 ounce) package spaghetti
  • 1 pound uncooked medium shrimp, peeled and deveined
  • salt and ground black pepper to taste
  • 2 tablespoons finely chopped shallots
  • 1 tablespoon crushed garlic
  • 0.25 cup chicken broth
  • 1 medium lemon, zested and juiced
  • 0.5 cup heavy cream
  • 5 large basil leaves, chopped
  • 1 pinch red pepper flakes
Instructions:
  • 1. Bring a big pot of lightly salted water to a boil. Add spaghetti and cook, stirring occasionally, until al dente, about 12 minutes.
  • While the pasta cooks, warm oil in a large skillet over medium heat. Season shrimp with salt and pepper, then add to the skillet and cook for 30 seconds on each side. Transfer cooked shrimp to a plate.
  • Saute shallots in the skillet for 2 minutes until softened. Add garlic and cook until aromatic, around 1 minute. Pour in chicken broth, lemon zest, and half of the lemon juice. Simmer for 2 minutes. Save the rest of the lemon juice for later.
  • Stir in the cream and bring to a gentle simmer. Add the shrimp back to the skillet and cook until they are heated through and turn pink, which should take 2 to 3 minutes. Finally, sprinkle in the basil.
  • Reserve 1/4 to 1/2 cup of pasta water before draining spaghetti.
  • Toss spaghetti into the skillet along with pasta water and pepper flakes. Mix well to coat the pasta. Add pepper to taste, if desired.
