Refreshing lemon dessert with a smooth twist on classic limoncello.
Ingredients:
  • 8 lemons, zested
  • 3 cups vodka
  • 2 quarts 2% reduced fat milk
  • 2 cups white sugar
Instructions:
  • Infuse lemon zest with vodka in a sealed container. Store in a cool, dark place, remembering to shake daily for 5 days to evenly distribute the flavors.
  • In a large pot, gently bring milk and sugar to a low boil while stirring until sugar dissolves. Remove from heat and let the milk mixture cool to room temperature. Strain the vodka mixture into the milk slowly using a sieve, discarding the lemon zest. Transfer the limoncello to a sealed bottle and chill in the freezer for 1 hour before serving cold.
