Indulgent, citrusy limoncello made with zesty lemon-infused Everclear, mixed with creamy milk, sugar, and vanilla for a rich digestif.
Ingredients:
  • 10 lemons
  • 1 (750-ml) bottle Everclear (a quality vodka will do if you can't find it)
  • 8 cups (1.9 liters) whole milk
  • 5 cups sugar (1 kilogram or 2.2 pounds)
  • 1/2 vanilla bean, seeds and pod

Instructions:
  • Zest lemons using a lemon zester or the fine groove side of a grater. Place zest and Everclear in a container and let infuse in a cool, dark place for one week. Strain liquid through cheesecloth into a large glass, stainless steel, or ceramic bowl after one week.
  • Create the limoncello base: Heat milk, sugar, and vanilla bean seeds and pod in a large stockpot or saucepan over medium heat until sugar dissolves. Let the mixture cool to room temperature (this will take a few hours). Remove the vanilla bean (rinse and save for later) and strain through cheesecloth.
  • Mix the limoncello base with the zest-infused Everclear. Strain the mixture through a cheesecloth-lined colander into bottles. Store in the freezer, leaving space for expansion. Consume within six months. Serve in chilled glasses. Enjoy!
