Pear sorbet (Sorbetto di pere)

Delicious pear sorbet - perfect for dessert or a fancy palate cleanser.
Ingredients:
  • 200 g caster sugar
  • 200 ml water
  • 1 kg soft pears peeled, quartered and cores removed
  • 1 lemon juice and zest of
  • 55 ml grappa or to taste
Instructions:
  • In a saucepan, combine sugar and water. Bring to a boil, then simmer for 3 minutes. Add quartered pears and simmer for 5 more minutes. Remove from heat, rest for 5 minutes, then stir in lemon juice and zest. Blend into a puree, strain into a dish. Add grappa, stir, taste, adjust if needed. Freeze, stirring with a fork every 30 minutes until firm. Serve with delicate biscuits. Enjoy within 2 days for best texture.
