Pears poached in limoncello with crema di latte

Ingredients:
  • 1 lemon
  • 3 egg yolks
  • 325g caster sugar
  • 0.30 gm ground cinnamon
  • 40g flour
  • 300ml milk
  • 300ml thin cream
  • 6 firm pears (such as Williams or beurre bosc), peeled
  • 80ml limoncello
Instructions:
  • Peel off the lemon zest with a vegetable peeler for the crema di latte. In a saucepan, combine egg yolks, 75g sugar, cinnamon, flour, milk, cream, and half the lemon zest. Cook over low heat, stirring constantly, for 20 minutes until slightly thickened. Transfer the crema to a bowl, cover with buttered greaseproof paper, and refrigerate until serving.
  • Squeeze the lemon to extract the juice. Put the pears in a saucepan, ensuring they are covered with water. Add the remaining sugar, lemon juice, remaining zest, and limoncello. Stir occasionally as you bring it to a boil to dissolve the sugar. Reduce heat, cover, and gently poach for 12 minutes until tender. Use a slotted spoon to lift out the pears. Boil the syrup rapidly until thick enough to coat a wooden spoon.
  • Place a luscious pear on each plate, shower with syrup, and add a dollop of velvety crema di latte for a perfect finish.
