Pears poached in spiced caramel

Ingredients:
  • 500ml apple juice
  • 250ml calvados
  • 55g brown sugar
  • 2 cinnamon sticks
  • 8 whole cloves
  • 4 green cardamom pods, bruised
  • 4 whole star anise
  • 1 tsp whole black peppercorns
  • 4 buerre bosc pears, peeled
  • Creme fraiche, to serve
Instructions:
  • In a medium saucepan over low heat, mix together apple juice, calvados, sugar, cinnamon, cloves, cardamom, star anise, and peppercorns. Stir occasionally and cook until sugar dissolves, for about 5 minutes. Increase heat to high, then add the pears and bring to a boil. Reduce heat to low and simmer with a sheet of baking paper on top to keep the pears submerged, turning occasionally, until pears are tender, for about 1 hour.
  • Once pears are tender, transfer them to a heatproof bowl. Increase syrup heat to high and boil for 5-10 minutes until thickened. Pour hot syrup over pears and chill in the fridge for optimal flavor infusion.
  • Arrange the pears on serving plates, generously drizzling them with the remaining syrup. Serve alongside creme fraiche, if desired.
