Elevate your dinner party with delicious poached pears for dessert.
Ingredients:
  • 1 vanilla bean, halved lengthways
  • 2 cinnamon sticks
  • 0.63 gm ground nutmeg
  • 360.00 gm firmly packed brown sugar
  • 4 Packham pears or beurre bosc pears, peeled (see tip)
  • Double cream or ice-cream, to serve
Instructions:
  • In a saucepan, combine 4 cups of cold water with vanilla, cinnamon, nutmeg, and sugar. Heat over medium-high heat until boiling, then reduce to medium-low heat.
  • Add the pears and cook them partially covered, flipping them occasionally, for 18 to 20 minutes until they are just tender. Remove from heat and let the pears cool in the syrup, flipping occasionally. Using a slotted spoon, transfer the pears to a plate.
  • Bring the syrup back to medium-high heat and let it boil for 10 minutes or until it reduces by one-third. Serve the pears with the sugar syrup along with cream or ice-cream.
