Creamy mixed vegetable and pesto bake

Whip up a delicious high-fiber bake with frozen veggies, creamy cheese, and flavorful pesto.
Ingredients:
  • 500g packet frozen broccoli and cauliflower mix
  • 375.00 ml frozen peas, corn and capsicum
  • 1 green onion, chopped
  • 40.00 ml plain flour
  • 300ml Cooking Cream
  • 40.00 gm basil pesto
  • 187.50 ml finely grated parmesan or vegetarian hard cheese
  • 82.50 ml grated mozzarella
  • 62.50 ml panko breadcrumbs
  • Chopped fresh flat-leaf parsley leaves, to serve
Instructions:
  • Preheat your oven to 200C (180C fan-forced).
  • 1. Boil frozen cauliflower and broccoli for 2 minutes, then drain and place in a bowl. Mix in frozen peas, corn, capsicum, and onion. Sprinkle flour, season well, and toss to combine. Transfer the mixture to a 6-cup baking dish.
  • In a jug, combine cream, pesto, and 1/2 cup parmesan. Pour the mixture over the vegetables in the dish. Combine the remaining 1/4 cup parmesan, mozzarella, and breadcrumbs, then sprinkle over the vegetables.
  • Bake until bubbly and top is crisp and golden, about 20 minutes. Sprinkle with fresh parsley before serving.
