Cream cheese hollandaise: Quick, creamy alternative to traditional.
Ingredients:
  • 3 ounces cream cheese, softened
  • 2 egg yolks
  • 2 tablespoons lemon juice
  • 0.25 teaspoon fine salt
  • 0.5 cup milk, or as needed
Instructions:
  • Combine cream cheese and egg yolks using an electric mixer in one bowl. In another small bowl, mix together lemon juice and salt.
  • Combine the cream cheese mixture with the lemon juice mixture in a saucepan over low heat. Gradually increase the heat to medium-low and bring the mixture to a gentle boil while whisking constantly for approximately 3 minutes.
  • Gradually pour milk into the mixture until it reaches your desired consistency. Keep whisking constantly as you cook for 1 to 2 minutes until a smooth sauce forms.
