Creamy mock cream: perfect for tarts and cakes.
Ingredients:
  • 140g (2/3 cup) caster sugar
  • 41.20 gm milk
  • 1.50 gm powdered gelatine
  • 185g unsalted butter, at room temperature, chopped
  • 8.80 gm vanilla extract
Instructions:
  • Gently mix together sugar, milk, and 80ml (1/3 cup) water in a small saucepan over low heat until the sugar completely dissolves. Avoid boiling.
  • Gently sprinkle the gelatine over the sugar mixture and stir until it dissolves. Let it cool to room temperature until slightly thickened.
  • In a bowl, use electric beaters to whip together the butter and vanilla until light and fluffy. While the beaters are running, slowly incorporate the cooled milk mixture until the mixture is creamy and pale.
