Creamy Mushroom Sauce for Pasta

Indulgent porcini mushroom sauce with creamy texture and rich flavors, ideal for pasta, steak, or chicken.
Ingredients:
  • 2 ounces dried porcini mushrooms
  • 2 cups hot water, or as needed
  • 1 stick butter
  • 0.25 cup finely chopped fresh Italian parsley
  • 2 cloves garlic, finely chopped
  • 0.66666668653488 cup heavy cream
  • 0.66666668653488 cup dry white wine
  • salt and freshly ground black pepper to taste
Instructions:
  • Place the porcini mushrooms in a bowl and cover them with hot water. Allow them to soak until they plump up, approximately 30 minutes.
  • Strain mushrooms and soaking liquid through a coffee filter or sieve over a bowl, reserving liquid for sauce. Rinse mushrooms thoroughly to remove any grit, then roughly chop.
  • Melt butter in a large nonstick skillet over medium-low heat. Add parsley and garlic, then stir in chopped mushrooms. Add a few tablespoons of reserved soaking water and cook for about 5 minutes until most of the moisture evaporates, stirring occasionally.
  • Pour in the cream and wine, gently stir until well mixed. Simmer lightly until the liquid slightly reduces, approximately 5 minutes. Season with salt and pepper to taste.
