Indulge in a cozy winter breakfast with fresh fruit topping.
Ingredients:
  • 30g rolled oats
  • 65g cottage cheese
  • 1/2 pink lady apple, finely chopped
  • 40g blueberry
  • ground cinnamon
Instructions:
  • In a small saucepan, combine oats with 1 cup (250ml) of boiling water. Cook over medium heat, stirring constantly, for 4–5 minutes or until mixture comes to a boil and thickens. Cover and let sit for 5 minutes until creamy and thickened.
  • In a bowl, blend together half of the cottage cheese with 1 tablespoon of water until creamy. Mix it into the oats until well combined. Gently fold in three-quarters of the apple. Serve topped with blueberries, the rest of the apple, and the remaining cottage cheese. Finish by sprinkling with cinnamon before serving.
