Start your day with a refreshing coconut-orange smoothie with a hint of vanilla.
Ingredients:
  • 1 large navel orange, peeled and cut into chunks
  • 0.25 cup low-fat vanilla Greek yogurt
  • 2 tablespoons orange juice
  • 2 tablespoons vanilla-flavored almond milk
  • 2.5 tablespoons sweetened shredded coconut, divided
  • 1 teaspoon brown sugar
  • 0.5 teaspoon vanilla extract
  • 1 cup ice cubes
Instructions:
  • In a blender, blend orange chunks, yogurt, orange juice, almond milk, 2 tablespoons coconut, brown sugar, and vanilla extract until smooth. Add ice cubes and blend until thick. Pour into 2 glasses and top with remaining coconut for garnish.
