Indulge in a comforting creamy penne pasta bake with cherry tomatoes, basil, and a blend of Parmesan and mozzarella - a cozy vegetarian option perfect for any night of the week.
Ingredients:
  • 1 (16 ounce) package penne pasta
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 3 (6 ounce) cans tomato sauce
  • 2 tablespoons tomato paste
  • 0.75 cup heavy whipping cream
  • 0.5 cup grated Parmesan cheese
  • 1 pinch white sugar
  • salt and freshly ground black pepper
  • 1 pound cherry tomatoes, halved
  • 1.25 cups shredded mozzarella cheese
  • 1 small bunch fresh basil, finely chopped
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and generously grease a baking dish.
  • 1. Boil generously salted water in a large pot. Add penne and cook, stirring occasionally, until al dente, about 11 minutes. Reserve 1 cup cooking water before draining.
  • In a large skillet, warm olive oil over medium heat. Sauté onion until soft and translucent for about 5 minutes. Toss in garlic and cook for another 30 seconds. Pour in tomato sauce and tomato paste, simmer until slightly reduced for about 5 minutes. Stir in cream and Parmesan cheese, and season with sugar, salt, and pepper to taste.
  • Swirl a bit of the pasta water into the sauce, then mix in the cooked penne. Take off the heat and gently fold in cherry tomatoes, half of the mozzarella, and fresh basil. Adjust the consistency with additional pasta water if necessary. Transfer the penne to the baking dish and sprinkle the rest of the mozzarella on top.
  • Bake in the oven until bubbly and cheese is melted, approximately 20 minutes.
