Colorful, quick and easy creamy pasta primavera with asparagus, carrots, and tomatoes. Perfect for busy weeknights!
Ingredients:
  • 2 cups penne pasta
  • 2 teaspoons olive oil
  • 1 pound fresh asparagus, trimmed and cut into 2-inch pieces
  • 3 carrots, cut into strips
  • 2 cups cherry tomatoes, halved
  • 1 clove garlic, minced, or more to taste
  • 1 cup grated Parmesan cheese
  • 1 cup heavy whipping cream
  • 0.25 teaspoon ground black pepper
Instructions:
  • Boil a pot of salted water, add penne, and cook until al dente, about 11 minutes. Drain.
  • In a large skillet, heat olive oil over medium-high heat. Saute asparagus and carrots until crisp-tender, about 5 minutes. Add tomatoes and garlic; continue sauteing until garlic is fragrant, about 1 minute.
  • Combine Parmesan cheese, cream, and black pepper with vegetables until the cheese melts, creating a smooth sauce in just 2 to 3 minutes. Toss in the pasta until it is coated evenly with the sauce.
