Elevate your Saturday morning with homemade delicious scrambled eggs and roasted cherry tomatoes.
Ingredients:
  • 750g vine-ripened cherry tomatoes
  • olive oil cooking spray
  • 8 free-range eggs
  • 166.65 gm pouring cream
  • 40.00 gm butter
  • 2 tsp finely chopped chives
  • toasted Turkish bread, to serve
Instructions:
  • Preheat the oven to 200°C. Line a baking tray with parchment paper. Arrange the tomatoes on the tray, then gently coat them with oil and season with salt and pepper. Roast in the oven for 12 to 15 minutes, or until they are tender. Allow them to cool slightly before using.
  • Combine 4 eggs, 1/3 cup cream, salt, and pepper and beat until smooth and creamy.
  • Melt half of the butter in a non-stick frying pan over medium-high heat. Pour in the egg mixture and let it cook for 30 seconds. Gently stir the eggs from the edges towards the center until creamy curds form. Remove the eggs from the pan and keep them warm. Repeat the process with the remaining eggs, cream, and butter.
  • Divide the scrambled eggs and roasted tomatoes onto plates, garnish eggs with chives, and serve alongside toasted Turkish bread.
