Elevate your breakfast with creamy scrambled eggs topped with luxurious salmon roe.
Ingredients:
  • 14 (59g each) free-range eggs, lightly whisked
  • 310ml cream
  • 1 bunch chives, cut into 5cm lengths
  • 50g salmon roe
  • 6 thick slices ciabatta, toasted
  • Butter, to serve
Instructions:
  • In a medium heatproof bowl, gently combine the eggs and cream. Set the bowl over a saucepan of simmering water. Cook for 15 minutes, stirring occasionally with a plastic spatula to keep the eggs from sticking, until just set.
  • Divide the scrambled eggs onto plates and garnish with fresh chives. Serve right away with roe, toasted ciabatta, and butter.
