Ingredients:
  • 25g unsalted butter
  • 6 eggs, lightly beaten
  • 83.33 gm cream
  • Salt and cracked black pepper
  • 75g smoked salmon slices, chopped
Instructions:
  • In a non-stick frying pan over medium low heat, gently melt the butter. Then, in a bowl, lightly whisk together the eggs, cream, salt, and pepper until well combined.
  • Gently fold the egg mixture in the pan for 2-3 minutes until just set. Sprinkle with smoked salmon and continue cooking for another 2-3 minutes, incorporating the salmon into the scrambled eggs. Serve with hot toast.
