Tuscan-style shrimp pasta with Parmesan cream sauce, sun-dried tomatoes, spinach, and Italian herbs.
Ingredients:
  • 6 ounces spaghetti
  • 2 tablespoons salted butter
  • 6 cloves garlic, minced
  • 1 pound shrimp
  • 1 small yellow onion, diced
  • 0.5 cup sliced fresh mushrooms
  • 0.5 cup white wine
  • 5 ounces oil-packed sun-dried tomatoes, drained and cut into strips
  • 3 cups baby spinach leaves
  • 1.75 cups half-and-half
  • 0.66666668653488 cup freshly grated Parmesan cheese
  • 2 teaspoons dried Italian herb seasoning
  • 1 tablespoon water
  • 1 teaspoon cornstarch
  • 1 tablespoon chopped fresh parsley
Instructions:
  • 1. Boil a large pot of lightly salted water. Cook spaghetti in the boiling water, stirring occasionally, until al dente, about 12 minutes. Drain and keep warm.
  • As the pasta simmers, melt butter in a spacious skillet over medium heat. Sauté garlic until fragrant, approximately 1 minute. Add shrimp and cook until they turn bright pink outside and the flesh is opaque, 2 to 3 minutes. Transfer shrimp and garlic to a plate.
  • Sauté onions and mushrooms in a hot skillet until softened, for about 5 to 7 minutes. Pour in white wine and simmer until reduced by half, around 2 to 3 minutes. Then, stir in sun-dried tomatoes and cook for 1 to 2 minutes more.
  • Lower the heat and introduce the spinach and half-and-half to the pan. Cook until the spinach wilts, approximately 2 to 3 minutes. Incorporate the Parmesan cheese and Italian seasoning, then let it simmer until the cheese has melted, about 3 minutes.
  • Combine water and cornstarch in a small bowl. Pour mixture into the skillet and stir until sauce thickens.
  • Return the shrimp to the flavorful sauce and heat through for approximately 1 minute. Ladle the savory sauce over the pasta and garnish with fresh parsley before serving.
