Zesty Tuscan soup with sausage, potatoes, creamy broth, spinach, and a hint of spice. Recreates the beloved restaurant favorite.
Ingredients:
  • 1 pound bulk mild Italian sausage
  • 1.25 teaspoons crushed red pepper flakes
  • 4 slices bacon, cut into 1/2 inch pieces
  • 1 large onion, diced
  • 1 tablespoon minced garlic
  • 5 (13.75 ounce) cans chicken broth
  • 6 medium potatoes, thinly sliced
  • 1 cup heavy cream
  • 0.25 bunch fresh spinach, tough stems removed
Instructions:
  • In a Dutch oven over medium-high heat, sauté Italian sausage and red pepper flakes until perfectly browned and crumbly, about 10 to 15 minutes. Remove from heat, drain, and set aside.
  • Fry bacon in the Dutch oven until crispy for 10 minutes over medium heat. Keep a bit of drippings in the pot with the bacon. Add onions and garlic, sauté until onions are soft and translucent for about 5 minutes.
  • Pour in the flavorful chicken broth and allow it to come to a vigorous boil. Introduce the potatoes and let them simmer until tender when pierced with a fork, approximately 20 minutes. Lower the heat to medium and gently incorporate the cream, savory cooked sausage, and vibrant spinach. Continue to cook and stir until the spinach wilts and the sausage is heated throughout. Serve and enjoy!
