Creamy vanilla slice

Upgrade a classic dessert with the richness of white chocolate.
Ingredients:
  • 2 sheets butter puff pastry, thawed
  • 500g Original Spreadable Cream Cheese
  • 257.50 gm milk
  • 200g White Chocolate Melts
  • 20.00 gm custard powder
  • 1 tsp vanilla bean paste
  • 25g butter
  • 225.00 gm icing sugar mixture, sifted
  • Pulp of 23 passionfruit
Instructions:
  • Lay the puff pastry sheets on parchment-lined baking trays and gently pierce with a fork. Bake in a preheated oven at 200°C for 12–15 minutes or until they turn a lovely golden brown. Press down lightly on each pastry sheet with another tray to flatten. Allow to cool.
  • In a saucepan, gently heat PHILLY and milk until just boiling. Remove from heat, add chocolate, and stir until melted.
  • In a large bowl, whisk together the egg, custard powder, sugar, and vanilla until pale. Add the PHILLY mixture and whisk until smooth. Transfer the mixture to a saucepan and stir over medium heat until thickened. Remove from the heat and stir in the butter. Transfer to a bowl and let it cool.
  • 1. Line a 20cm square cake pan with parchment paper, leaving a 5cm overhang. 2. Lay one pastry sheet on the bottom of the pan. 3. Spread the custard evenly over the pastry. 4. Place the second pastry sheet on top. 5. Chill in the refrigerator for 4-6 hours.
  • Mix the icing sugar and passionfruit pulp in a bowl until it forms a soft icing. Spread this over the pastry and let it set. Once set, remove the slice from the pan and cut it into squares.
