Irresistible party dessert platter guaranteed to vanish in seconds!
Ingredients:
  • 4 egg yolks
  • 5.00 gm cornflour
  • 45g caster sugar
  • 1 vanilla bean, split
  • 600ml thick cream
  • Demerara sugar, to sprinkle
Instructions:
  • Use electric beaters to whip together yolks, cornflour, and sugar until a thick and creamy consistency is achieved.
  • Scrape the vanilla bean seeds into a pan, discard the bean, add cream and bring to a boil. Pour over egg mixture, stir to combine, then cook over low heat in a clean pan until thickened.
  • Strain mixture through a fine sieve into a bowl and cover with plastic wrap. Chill in the fridge for 1 hour. Spoon into serving spoons, sprinkle with sugar, and use a kitchen blowtorch to caramelize. Or broil and serve right away.
