Get the kids involved in creating a tasty summer treat together.
Ingredients:
  • 250g pkt oreo biscuits
  • 30g melted unsalted butter
  • 40ml (2 tbsp) creme de menthe
  • A few drops of green food colouring
  • 1L vanilla ice-cream
  • 30g dark chocolate, melted
Instructions:
  • Preheat your oven to 180°C. Pulse the biscuits in a food processor until they form fine crumbs, then mix in the melted butter to combine.
  • On a flat baking sheet, arrange six 10 x 4cm round moulds. Press the biscuit crumbs firmly into the base of each mould, allowing some of the mixture to reach halfway up the sides. Bake in the oven for five minutes, then let them cool completely.
  • Mix in the creme de menthe and food colouring into the vanilla ice cream mixture during the last step of beating or just before the ice cream is fully churned in the machine. (If using store-bought ice cream, let it soften in the fridge for 15 minutes, then mix in the creme de menthe and food colouring.)
  • Spoon the ice-cream into the moulds, then use a spatula to create a smooth surface on top. Place in the freezer until the ice-cream is firm.
  • Thoroughly clean and dry the leaves, then brush the underside with chocolate. Refrigerate until the chocolate hardens. Remove and discard the leaf.
  • Gently unmold the ice-cream cakes onto plates and adorn with the chocolate leaves for a beautiful presentation.
