Create delicate French crepes filled with delectable almond custard filling. Experience the essence of France in each luscious layered crepe.
Ingredients:
  • 310ml (1 1/4 cups) reduced-fat milk
  • 4.00 eggs
  • 150g (1 cup) plain flour
  • 10.00 gm caster sugar
  • 110g (1/2 cup) white sugar
  • 50g (1/3 cup) plain flour
  • 2 tsp vanilla bean paste
  • 500ml (2 cups) milk
  • 100g (1 cup) almond meal
  • 150g 70% cocoa dark chocolate, chopped
  • 50g butter, chopped
  • 60g (1/3 cup) blanched almonds, toasted, coarsely chopped
Instructions:
  • Whisk together milk and eggs in a jug. Sift flour and sugar into a bowl, then make a well in the center. Gradually whisk in the milk mixture until smooth. Chill in the fridge for 20 minutes before using.
  • Combine eggs, sugar, flour, vanilla, and milk in a saucepan over low heat until the custard boils, about 4-6 minutes. Stir in almond meal, then transfer to a bowl and cover the surface with plastic wrap.
  • 1. Grease a 20cm frying pan and heat over medium-low heat. 2. Add 2 tablespoons of batter to the pan and tilt to cover the base. Cook until the edge starts to curl, about 1 minute. 3. Flip the crepe and cook until golden, about 1 minute. 4. Transfer the cooked crepe to a plate and keep warm. Repeat with the rest of the batter. 5. Place one crepe on a plate and spread a little custard on top. 6. Continue layering the crepes with custard, ending with a crepe on top.
  • In a saucepan over low heat, gently stir together the chocolate and butter until smooth and silky.
  • Drizzle topping over crepes and sprinkle with almonds for a delightful finish.
