French crepes: Thin, quick-cooking pancakes.
Ingredients:
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups milk
  • 2 tablespoons butter, melted
  • 1/2 teaspoon vanilla
  • 2 eggs
  • Butter, margarine or shortening
  • Applesauce, sweetened berries, jelly or jam, if desired
  • Powdered sugar, if desired
Instructions:
  • Combine flour, granulated sugar, baking powder, and salt in a medium bowl. Add milk, 2 tablespoons of butter, vanilla, and eggs. Whisk until smooth.
  • Prepare a 6- to 8-inch skillet or crepe pan by lightly brushing it with butter and heating it over medium heat until it starts to bubble. Pour slightly less than 1/4 cup of batter into the skillet for each crepe. Quickly tilt and rotate the skillet to spread a thin layer of batter across the bottom. Cook until it's a light brown color. Use a wide spatula to gently loosen the edges, then flip the crepe and cook the other side until it's also light brown. Repeat these steps with the rest of the batter, buttering the skillet as necessary.
  • Layer the crepes with waxed paper in between to keep them moist. Spread a thin layer of applesauce, sweetened berries, jelly, or jam on each warm crepe, then roll them up with the more attractive side facing out. Dust them with powdered sugar for a sweet finish.
