Crimson Crumble Bars

Indulge in a delicious oat bar bursting with fruity flavors and crunchy nuts.
Ingredients:
  • 2 cups fresh or frozen cranberries
  • 1 cup granulated sugar
  • 2 teaspoons cornstarch
  • 1 can (8 oz) crushed pineapple in unsweetened juice, undrained
  • 1 cup Gold Medal™ whole wheat or all-purpose flour
  • 2 cups old-fashioned oats
  • 2/3 cup packed brown sugar
  • 1/4 teaspoon salt
  • 3/4 cup butter or margarine, cut into pieces
  • 1/2 cup chopped pecans, if desired
Instructions:
  • Preheat the oven to 350°F and grease a 13x9-inch pan with cooking spray. In a 2-quart saucepan, combine cranberries, granulated sugar, cornstarch, and pineapple. Bring to a boil, stirring often, then lower the heat. Cover and simmer for 10 to 15 minutes, stirring occasionally, until the cranberries burst and the sauce turns translucent.
  • In a large bowl, combine flour, oats, brown sugar, and salt. Use a pastry blender or fork to cut in the butter until the mixture is crumbly. Mix in the pecans. Set aside 1 cup of the mixture for the topping. Press the rest of the crumb mixture into the pan.
  • Cover the crust with the fruit mixture, then generously sprinkle with the remaining crumb mixture.
  • Bake for 28-32 minutes until the top is golden brown. Let it cool completely on a rack for at least 1 hour. Cut into 6 rows by 6 rows to make bars.
