Crisp greens with sesame dressing

Elevate your veggies with this crispy and tasty side.
Ingredients:
  • 1 bunch fresh asparagus, ends trimmed, halved diagonally
  • 150g snow peas, topped
  • 150g green beans, topped
  • 150g butter beans, topped
  • 42.00 gm fresh lemon juice
  • 21.00 gm soy sauce
  • 2 tsp sesame oil
  • 1 garlic clove, chopped
  • 6.00 gm sesame seeds
Instructions:
  • Bring a large saucepan of boiling water to life. Drop in the asparagus and snow peas and cook for 1 minute until they turn vibrant green and are just tender. Scoop out the vegetables with a slotted spoon and give them a quick cold water bath in a colander.
  • Once drained, set aside. Refill the saucepan with water and bring to a boil over high heat. Add beans and cook again before refreshing them.
  • Combine lemon juice, soy sauce, sesame oil, garlic, and sesame seeds in a small bowl. Whisk with a fork until fully mixed.
  • Combine the vegetables with the dressing in a bowl, tossing them well. Chill in the fridge for at least 1 hour to enhance the flavors before serving.
