Elevate baked fish with a vibrant fruit salsa for a family-friendly meal.
Ingredients:
  • 3 tablespoons butter or margarine
  • 2/3 cup Original Bisquick™ mix
  • 1/4 cup yellow cornmeal
  • 1 teaspoon chili powder
  • 1 1/4 teaspoons salt
  • 1 lb orange roughy or other white fish fillets
  • 1 egg, beaten
  • 1 can (8 oz) pineapple chunks, drained
  • 1 tablespoon finely chopped red onion
  • 1 tablespoon chopped fresh cilantro
  • 1 tablespoon lime juice
  • 1 kiwifruit, peeled, chopped
  • 1 mango or papaya, cut lengthwise in half, pitted and chopped
  • 1 jalapeño chile, seeded, finely chopped
Instructions:
  • Preheat oven to 425°F. Place butter in a 13x9-inch pan and let it melt in the oven.
  • Combine Bisquick mix, cornmeal, chili powder, and salt in a small bowl. Dip fish fillets in egg and coat with the Bisquick mixture before placing them in a pan.
  • Bake the fish uncovered for 10 minutes, then turn it and continue baking for about 15 minutes more, or until the fish easily flakes with a fork.
  • Combine all the ingredients for the fruit salsa in a glass or plastic bowl. Serve the flavorful salsa alongside the fish.
