Crispy baked fish sticks with choice of cod, halibut, or catfish, served with tangy tartar sauce.
Ingredients:
  • Fish Sticks
  • 1 pound cod, halibut, or catfish filets,thawed if frozen
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup panko bread crumbs
  • 2 teaspoons Old Bay seasoning, Cajun seasoning, or lemon-pepper seasoning
  • 1 egg
  • 1 tablespoon water
  • 1/3 cup flour
  • Nonstick cooking spray
  • Lemon wedges
  • Tartar Sauce
  • 1/3 cup mayonnaise
  • 2 tablespoons pickle relish (sweet or dill)
  • 1 tablespoon finely chopped red onion
  • 1 1/2 teaspoon chopped fresh dill weed or 1/2teaspoon dried dill weed
  • 1 teaspoons capers (optional)
  • 1/2 teaspoon lemon juice
Instructions:
  • Prepare all your ingredients.
  • Preheat the oven to 375 degrees F (190 degrees C) and prepare a baking sheet with parchment paper or a silicone baking mat.
  • Pat the fish gently with paper towels to remove excess moisture. Season generously with salt and pepper, then slice the filets into 1-inch strips.
  • In a shallow dish, mix panko and Old Bay seasoning. In another shallow dish, whisk together egg and water. Place flour in a third shallow dish.
  • Coat fish pieces in flour, dip in egg mixture, then coat with panko breadcrumbs before placing on the baking sheet.
  • Spray fish sticks generously with cooking spray and bake until golden brown, about 18-20 minutes, flipping halfway through.
  • Combine mayonnaise, pickle relish, onion, dill weed, capers (if using), and lemon juice in a bowl. Refrigerate for at least 2 hours or up to 1 week before serving.
  • Present the fish sticks accompanied by Tartar Sauce and lemon wedges.
