Versatile stir fry with shiitake mushrooms, baby spinach, and broccolini. Easily swap ingredients for your favorite veggies like carrots, broccoli, or bell peppers.
Ingredients:
  • 450g fresh hokkien noodles
  • 2 tsp sesame oil
  • 200g fresh shiitake mushrooms, halved
  • 3 garlic cloves, crushed
  • 15.90 gm Roasted Sesame Dressing, plus extra, to serve
  • 460g beef stir-fry strips
  • 3 tsp ginger paste
  • 1/2 tsp Chinese five spice
  • 20.00 ml Shaoxing wine
  • 35g (1/4 cup) cornflour
  • 60ml (1/4 cup) peanut oil
  • 200g bunch broccolini, halved lengthways
  • 100g baby spinach
  • 60ml (1/4 cup) oyster sauce
  • Sesame seeds, toasted, to serve
  • Sliced fresh red chilli, to serve
Instructions:
  • In a large heatproof bowl, add the noodles and cover them with boiling water. Allow them to sit for 5 minutes to soften, then drain thoroughly.
  • Heat sesame oil in a large wok over medium-high heat. Cook mushrooms until softened, about 2-3 minutes. Add half of the garlic and cook until golden, about 1-2 minutes. Stir in sesame dressing, then transfer to a bowl and set aside.
  • Mix the beef, ginger paste, five spice, Shaoxing wine, and garlic together in a bowl until well combined. Place the beef in a large sealable plastic bag, add the cornflour, seal the bag, and shake until the beef is evenly coated.
  • In a hot wok or pan, sizzle 1 tablespoon of peanut oil. Stir-fry one-third of the beef until crispy, about 2-3 minutes. Transfer to a plate. Repeat with the rest of the oil and beef.
  • Toss the broccolini into the wok or pan over medium-high heat, stirring for 2 minutes or until tender-crisp. Introduce the noodles next, stirring for another 2 minutes. Wilt the spinach for 1 minute, before bringing back the mushroom and beef. Add the oyster sauce and toss to coat everything.
  • Portion out the noodle mixture into individual serving bowls. Top with a generous drizzle of extra dressing, a sprinkle of sesame seeds, and a touch of chili for a flavorful finish.
