Irresistible butterscotch chip cookies with a crispy surprise of rice cereal!
Ingredients:
  • 0.5 cup butter, softened
  • 1 cup white sugar
  • 1.25 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 2 cups crisp rice cereal
  • 1 cup butterscotch chips
Instructions:
  • In a large bowl, whisk the butter or margarine with the sugar until it's light and fluffy. Mix in the egg and vanilla until well combined. Add the flour, salt, and baking soda, and mix until fully incorporated. Fold in the cereal and butterscotch chips.
  • Spoon heaping tablespoons of the mixture onto a greased cookie sheet.
  • Bake at 350 degrees F (175 degrees C) for 12-15 minutes until cookies are lightly browned. Cool on racks.
