Delicious peanut butter cereal bars wrapped around a tasty chocolate-butterscotch filling for a fun twist on a classic treat.
Ingredients:
  • 1 (10 ounce) package large marshmallows
  • 0.25 cup butter
  • 0.25 cup peanut butter
  • 5.5 cups crispy rice cereal (such as Rice Krispies®)
  • 1.3333333730698 cups semi-sweet chocolate chips
  • 0.75 cup butterscotch chips
Instructions:
  • Prepare a 15x10x1-inch pan by lining it with waxed paper and lightly greasing the paper.
  • In a large microwave-safe bowl, mix marshmallows, butter, and peanut butter together. Cover the bowl and microwave until the marshmallows are melted, for about 2 minutes. Stir thoroughly before serving.
  • Mix rice cereal into the gooey, sweet marshmallow blend until fully coated; then, spread the mixture evenly onto the prepared pan.
  • In a microwave-safe bowl, melt chocolate chips and butterscotch chips together for about 2 minutes. Stir until smooth.
  • Spread the chocolate mixture evenly over the rice cereal mixture, keeping a 1-inch border. Roll the cereal mixture around the chocolate filling jelly-roll style starting from the short side. Peel off the waxed paper as you roll. Carefully place the roll, seam-side down, on a serving platter. Chill until set, approximately 1 hour, then slice into narrow pieces.
