Gluten free, dairy free peanut butter bars with oven-toasted rice cereal - a delicious and family-friendly treat.
Ingredients:
  • 1/3 cup honey
  • 1/4 cup packed brown sugar
  • 2 tablespoons coconut oil
  • 1/2 cup creamy peanut butter
  • 5 cups oven toasted rice cereal
  • 1/2 cup dairy-free semisweet chocolate chips
  • 1 tablespoon creamy peanut butter
Instructions:
  • Coat a 9- or 8-inch square pan with cooking spray.
  • In a 3-quart saucepan, bring honey, sugar, and coconut oil to a gentle boil over medium heat, stirring constantly. Remove from heat, then mix in peanut butter. Add cereal and stir until well coated. Press the mixture firmly into the pan (expect some cereal to break).
  • In a medium microwave-safe bowl, heat chocolate chips and peanut butter on High for 1 minute until smooth, stirring well. Spread the chocolate mixture evenly over the bars and refrigerate for about 30 minutes until set. Cut into 6 rows by 4 rows and enjoy!
