Separate rind for irresistibly crispy crackling.
Ingredients:
  • 3 green onions, trimmed, thinly sliced
  • 2 garlic cloves, crushed
  • 4cm piece fresh ginger, peeled, finely grated
  • 131.25 gm salt-reduced soy sauce
  • 262.50 gm pineapple juice
  • 45.00 gm brown sugar
  • 20.00 ml coriander stems, finely chopped
  • 1.7kg pork loin, rind removed and reserved
  • 18.20 gm extra virgin olive oil
  • 4.80 gm sea salt
  • Steamed jasmine rice, to serve
  • 48.80 gm fish sauce
  • 68.75 gm sweet chilli sauce
  • 20.00 ml sesame oil
  • 1/2 medium green papaya, peeled, seeded, grated
  • 2 Lebanese cucumbers, cut into ribbons
  • 250.00 ml bean sprouts
  • 125.00 ml fresh mint leaves, chopped
  • 125.00 ml fresh coriander, chopped
Instructions:
  • In a large ceramic bowl, combine onion, garlic, ginger, soy sauce, pineapple juice, sugar, and coriander stems. Mix well. Add pork and coat evenly. Cover and refrigerate for 1 to 2 hours.
  • 1. Preheat the oven to 200C/180C fan-forced. 2. Trim excess fat from the pork rind and place it, top-side up, on a wire rack over a baking tray. 3. Allow the rind to chill in the refrigerator for 20 minutes to dry out. 4. Rub the rind with oil and generously sprinkle with salt. 5. Roast for 40 minutes until it turns golden and crispy. 6. Once cooled, cut the rind into small pieces and set aside for later use.
  • Place the pork in a ceramic baking dish along with the marinade, cover with foil, and roast at 350°F for 30 minutes. Uncover and continue roasting for another 30 minutes or until the juices run clear when pierced with a skewer. Let it rest for 10 minutes before serving, then discard the pan juices before enjoying your delicious meal.
  • Whisk together fish sauce, sweet chili sauce, lime juice, and sesame oil in a small jug. In a bowl, mix papaya, cucumber, bean sprouts, mint, and coriander. Pour in half of the dressing and toss everything together until well combined.
  • Plate the papaya salad, then generously layer with the sliced pork, the rest of the dressing, and the flavorful pork crackling. Accompany with a side of steamed rice for a satisfying meal.
