Irresistible roast pork crackling with crispy, salty perfection, paired perfectly with honey butter gravy. Watch out for family dinner fights!
Ingredients:
  • 1kg pork rind
  • 4.80 gm sea salt
  • 1/2 tsp fennel seeds
  • 15g salted butter
  • 20.00 ml plain flour
  • 250ml (1 cup) chicken style liquid stock
  • 10.60 gm lemon juice
  • 5 sprigs fresh thyme, plus extra leaves, to serve
  • 42.90 gm honey
Instructions:
  • To achieve the crispiest skin, position the pork rind on a wire rack over the sink. Pour boiling water over the pork with caution. Once drained, gently pat dry with paper towel. Place the rind side-up on a plate, sprinkle with half the salt, and refrigerate overnight to allow it to dry out.
  • 1. Preheat the oven to 230C (210C fan forced). Crush fennel seeds and salt in a mortar and pestle. Pat-dry the pork, then coat evenly with the fennel salt mixture. Roast for 35-40 minutes until golden and crispy.
  • In a non-stick saucepan over medium heat, melt butter until foamy. Stir in flour and cook for 1 minute until foaming. Remove from heat and gradually mix in stock, lemon juice, and thyme. Return to medium heat, stirring constantly for 10-12 minutes until gravy boils and thickens. Stir in honey, season, and enjoy.
  • Cut the pork crackling into slices, then plate with the honey butter gravy, and garnish with a sprinkle of fresh thyme.
