Award-winning sweet and salty bar cookie recipe from 2008 contest.
Ingredients:
  • 1 pouch (1 lb 1.5 oz) Betty Crocker™ peanut butter cookie mix
  • 3 tablespoons vegetable oil
  • 1 tablespoon water
  • 2 cups dry-roasted or honey-roasted peanuts
  • 1 bag (10 oz) miniature marshmallows
  • 1/2 cup butter or margarine
  • 1/2 cup peanut butter
  • 1 can (14 oz) sweetened condensed milk (not evaporated)
  • 1 bag (10 oz) peanut butter chips (1 2/3 cups)
Instructions:
  • Preheat oven to 350°F and grease a 13x9-inch pan. Combine all cookie base ingredients except peanuts in a large bowl and mix until a soft dough forms. Press the dough into the bottom of the pan. Evenly distribute 2 cups of peanuts on top and gently press them into the dough. Bake for 12 to 15 minutes until lightly golden brown. Allow to cool for 30 minutes before serving.
  • In a 3-quart saucepan, gently melt marshmallows and butter over medium-low heat, stirring often. Mix in peanut butter, milk, and peanut butter chips until velvety.
  • Pour the marshmallow mixture over the cookie base and spread it evenly. Sprinkle 2 cups of peanuts over the top and press gently into the marshmallow. Refrigerate for about 1 hour until firm. Cut into 10 rows by 6 rows to make bars. Keep them covered in the refrigerator.
