Indulge in a savory baked dish of cheesy cracked wheat, potatoes, and onions.
Ingredients:
  • 1/4 cup uncooked cracked wheat*
  • 1/2 teaspoon vegetable oil
  • 1 medium onion, chopped (1/3 cup)
  • 1/2 teaspoon salt-free onion and herb seasoning blend
  • 1 cup mashed potatoes
  • 3 tablespoons grated reduced-fat Parmesan cheese blend
Instructions:
  • Boil 3/4 cup water in a 1-quart saucepan. Stir in cracked wheat, then simmer on low heat with lid on for 20 minutes. Allow it to sit covered for 10 minutes before serving.
  • Preheat oven to 350°. Grease a cookie sheet with nonstick cooking spray. In a 2-quart saucepan, heat oil over medium-high heat. Sauté onion and seasoning blend until onions are tender. Add cracked wheat, potatoes, and cheese. Spoon 20 tablespoonfuls onto the cookie sheet, spacing them about 1 inch apart. Bake for 20 to 25 minutes until golden brown.
