Homemade ginger beef: Crispy wok-fried beef strips in a sweet dark sauce with veggies.
Ingredients:
  • 0.75 cup cornstarch
  • 0.5 cup water
  • 1 pound flank steak, cut into thin strips
  • 0.5 cup canola oil, or as needed
  • 1 large carrot, cut into matchstick-size pieces
  • 1 green bell pepper, cut into matchstick-size pieces
  • 1 red bell pepper, cut into matchstick-size pieces
  • 3 green onions, chopped
  • 0.25 cup minced fresh ginger root
  • 5 garlic cloves, minced
  • 0.5 cup white sugar
  • 0.25 cup rice vinegar
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon red pepper flakes, or to taste
Instructions:
  • In a large bowl, whisk cornstarch with water until smooth. Add eggs and mix well. Coat steak strips with the mixture.
  • In a wok, heat canola oil 1-inch deep over high heat until hot but not smoking. Add 1/4 of beef strips to the hot oil, using a fork to separate them. Cook, stirring often, until crispy and golden, approximately 3 minutes. Drain cooked beef on paper towels and repeat with remaining batches.
  • Heat oil in the pan and sauté carrot, bell peppers, green onions, ginger, and garlic over high heat until lightly browned yet still crisp, about 3 minutes. Remember to leave 1 tablespoon of oil in the pan.
  • Combine sugar, rice vinegar, soy sauce, sesame oil, and red pepper flakes in a small bowl. Drizzle this flavorful sauce over the vegetables in the wok and bring it to a boil. Add the beef back into the veggie mix, cooking and stirring until heated through for about 3 minutes.
