Crispy onion bhajis recipe

Crispy Indian onion fritters bursting with flavor from herbs and spices, perfect for dipping in yogurt-mint sauce. Ideal as canapes or a tasty snack.
Ingredients:
  • 110g (3/4 cup) chickpea flour
  • 2.50 gm ground cumin
  • 1 tsp ground turmeric
  • 2.00 gm baking powder
  • 185ml (3/4 cup) chilled soda water
  • 40.00 ml chopped fresh coriander leaves
  • 2 brown onions, halved, thinly sliced
  • Vegetable oil, to shallow-fry
  • 260g (1 cup) Greek-style yoghurt
  • 62.50 ml fresh mint leaves, plus extra, to serve
  • 10.60 gm fresh lemon juice
Instructions:
  • In a bowl, mix together flour, cumin, turmeric, and baking powder. Season with salt and pepper. Stir in soda water and coriander until well combined. Finally, add the onion and stir until evenly mixed.
  • Heat oil in a medium non-stick frying pan so it reaches 3cm up the side of the pan. Cook heaped tablespoonfuls of onion mixture in batches for 2 minutes on each side, or until bhajis are crisp. Place on a paper towel-lined plate to drain excess oil.
  • Place creamy yoghurt, freshly chopped mint, and zesty lemon juice in a compact food processor. Add a sprinkle of seasoning for the perfect balance of flavor. Blend everything together until you achieve a silky smooth consistency.
  • Arrange the bhajis on a serving plate alongside the mint sauce. Garnish with extra mint leaves before serving.
