Irresistible Parmesan gnocchi crisps: crispy, chewy, salty, slightly spicy. Perfect for happy hour, easy to make.
Ingredients:
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/4 teaspoon crushed red pepper
  • 1/4 teaspoon Italian seasoning
  • 1/2 teaspoon Kosher salt
  • 1 package refrigerated prepared gnocchi
  • 2 cups grated Parmesan cheese, divided
  • Marinara sauce, for serving Optional
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and prepare a baking sheet by lining it with parchment paper.
  • In a bowl, mix together olive oil, garlic powder, red pepper, Italian seasoning, and kosher salt until fully combined. Add gnocchi and toss to coat evenly.
  • On a baking sheet lined with parchment paper, evenly spread 1 2/3 cups of Parmesan cheese into a rectangular shape. Arrange gnocchi in a single layer on top of the cheese, leaving some space between each piece. Drizzle any remaining oil over the gnocchi.
  • Place the dish in the preheated oven for 8 minutes. Sprinkle the rest of the cheese evenly over the gnocchi and bake until golden and crispy, for an additional 8 to 10 minutes. Allow the gnocchi to cool and crisp up for 5 to 10 minutes. Break the cheesy gnocchi into pieces and serve with marinara sauce if desired.
