Crispy roasted potatoes

Crispy sweet potatoes and regular potatoes elevate your roast dinner.
Ingredients:
  • 850g red rascal potatoes, cut into 5cm pieces
  • 850g orange sweet potato, cut into 5cm pieces
  • 1 bulb garlic, unpeeled, cloves separated
Instructions:
  • Add both the potatoes and sweet potatoes to a large saucepan and cover them with cold water. Bring it to a boil while covered, then reduce the heat to medium. Cook, partially covered, for 5 to 10 minutes until just tender. Drain the water from the pan.
  • Preheat your oven to 220°C and line a large roasting pan with baking paper. Spread the potatoes and sweet potatoes on the pan, drizzle with oil, toss to coat, and roast for 25 minutes, turning occasionally. Then add garlic and continue cooking for another 20 minutes, or until the vegetables are tender, golden, and crisp. Season with salt and pepper, then serve.
