Ingredients:
  • 1.5 cups all-purpose flour
  • 1.5 teaspoons kosher salt
  • 1 teaspoon white sugar
  • 0.5 cup freshly grated Parmigiano-Reggiano cheese
  • 3 tablespoons extra-virgin olive oil
  • 0.5 cup cold water
  • 1 tablespoon minced fresh rosemary
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C), then prepare a baking sheet with a silicon mat or parchment paper.
  • In a mixing bowl, combine flour, salt, sugar, and grated cheese. Mix well. Stir in rosemary, drizzle with olive oil, and pour in water. Use a fork to blend until a sticky dough forms and pulls away from the sides of the bowl, about 3 to 5 minutes.
  • On a lightly floured surface, knead the dough until it becomes smooth and no longer sticky, about 4 to 5 minutes. Then, divide the dough in half.
  • Sprinkle flour on work surface. Roll dough thinly. Lightly brush dough with water and sprinkle sea salt. Use a fork to prick the dough all over.
  • Cut each rolled out half into approximately 30 pieces using a pizza wheel, shaping them into squares, rectangles, or triangles. Transfer them to a baking sheet using a bench scraper or your floured fingers, as the dough will be sticky.
  • Bake in a preheated oven until golden brown and crispy, for 10 to 15 minutes, adjusting for thickness as needed.
