  • 2kg royal blue potatoes, peeled
  • 36.40 gm pure olive oil
Instructions:
  • Preheat your oven to 180C (160C fan-forced).
  • Par-cook the potatoes by steaming or microwaving them for 5-7 minutes. Place them on a baking tray, drizzle with oil, and toss to coat evenly. Season generously with sea salt and spread them out in a single layer on the tray.
  • Bake at 350°F for 1 hour and 15 minutes, flipping halfway through, until beautifully golden and perfectly crisp.
