Golden brown crispy smashed potatoes with a Parmesan crust are worth the extra steps for a delicious, fluffy inside.
Ingredients:
  • 1 1/2 pounds (1 1/2 - to 2-inch) red skinned potatoes (12 to 16 small potatoes)
  • 2 tablespoons olive oil, divided
  • 1/2 teaspoon salt, divided
  • 1/2 teaspoon ground black pepper, divided
  • 3 ounces Parmesan cheese, finely shredded (3/4 cup)
  • 2 tablespoons minced fresh Italian parsley
Instructions:
  • Prepare all your beautiful ingredients.
  • In a large saucepan, cover the potatoes with water by at least 1 inch. Boil until very tender, about 20 minutes. Drain after simmering with a lid on.
  • Preheat the oven to a high 450 degrees F (230 degrees C) while lining a large baking pan (15x10x1-inch) with foil and brushing it with 1 tablespoon of flavorful olive oil.
  • Place the potatoes in the baking pan, then gently press down on each one with a wide-bottomed glass to smash them to about 1/2-inch thickness, ensuring they remain whole.
  • Drizzle smashed potatoes with the remaining fragrant olive oil. Season generously with a pinch of salt and a hint of black pepper.
  • Roast uncovered in the preheated oven until the bottoms are lightly browned and crisp, approximately 15 minutes.
  • Sprinkle the remaining 1/4 teaspoon of salt and 1/4 teaspoon of pepper over the potatoes and roast them in the oven until they are lightly browned and crisp, for an additional 10 to 15 minutes.
  • Preheat the broiler and position a rack 4 to 5 inches from the heat source. Sprinkle potatoes with Parmesan cheese for a delicious topping.
  • Broil for 3 minutes until cheese is golden brown and crispy. Sprinkle with fresh parsley before serving.
